Lucas’s Recipe Corner - Part 3

Toast of Majorcan Mushrooms (serves 4 people)
Available in our
Bistrot Restaurant

Ingredients

· 4 slices Majorcan bread
· 300g Majorcan cheese
· 8 oven roasted tomatoes
· 600g mushrooms of the island*
· Fresh rosemary twigs
· 200ml fresh cream
· 2 cloves garlic
· Olive oil extra virgin
· Salt & black pepper

For the roasted tomatoes: Cut the tomato into segments, place on an oven proof plate and sprinkle with a little sugar and salt. Bake in the oven at 100º for approximately one hour. Put to one side.

For the sauce: Cut the Majorcan cheese into cubes and in a blender mix with the cream. Slowly warm the resulting sauce over a Bain Mari, until achieving the consistency desired. Put to one side.

Procedure: Lightly toast the slices of bread with a drizzle of olive oil, and put to one side. Fry the mushrooms in olive oil, with a sprig of rosemary and crushed garlic. Season to taste with salt and pepper.
Layer the mushrooms on the toasted bread with the baked tomatoes, spoon the cheese sauce over the top and finish with a sprig of fresh rosemary.

*Suggested Mallorca mushrooms: Tofona, Colmenilla, Murgolla, Oreja de liebre black or white, Taronja, or Robellón. This last is not native of the island but an excellent choice.

Lucas’s Recipe Corner - Part 2

Crunchy Thai Salad

Salad

Handful of Runner beans
1 Carrot
1/4 Red cabbage
1/4 Chinese White cabbage
60g Peanuts
60g Wasabi peas
15 sheets Wan Tan wrappers

Salad dressing
2 Tbsp. lemon juice
5 Tbsp. soy sauce
1 Tbsp. Sesame oil
1 Tsp. ginger
1 clove fresh garlic, pressed or minced
1 Tbsp sunflower oil
2 pinches of sugar

Preparation:
First make the dressing by mixing all salad dressing ingredients together in the bowl.
Slice the green beans, carrots then cut the slices in half and shred the cabbages, Place in a salad bowl.
Cut the wan tam in slices and fry at 180 degrees for 3 mins. Set aside.
Chop the peanuts and toast them.
Mix the vegetables, peanuts and wasabi peas in a bowl, pour the dressing over and toss well.
Place the fried wan tan in a dish and serve on top of the salad.
Decorate with bean sprouts and sweet chilli sauce.

Artesian Olive Oil and Organic Wine Excursion

The perfect way to experience the beautiful Mallorcan countryside whilst learning about the culture and long standing traditions.

Enjoy a gourmet delight with Cooking Holidays Mallorca where you will be shown the art of wine making and learn the history of these stunning vineyards as well as being offered a selection of vintage wines to sample yourself.

After enjoying a relaxed lunch in one of the nearby village restaurants we will journey to our next destination, the Olive Farm. Through winding roads and past scenic villages, the journey itself will capture you.

On arrival at the Olive Farm you will be treated to a tour of this ancient Mill and plantation, learning about the process of making olive oil, the history of the land as well as sampling their finest olive oils.

At the end of this fun-filled day, you will leave with some great memories and a developed understanding of the Spanish culture.

Lucas’s Recipe Corner

Lemongrass Sea bass with fennel, Citrus salad and seafood sauce (serves 4 people)

This dish features in our new Dinner Menu in the Bistrot Restaurant
Ingredients

8 x Sea bass fillets
4 sticks of Lemongrass
2 white fennel bulbs
2 pink grapefruits
2 oranges
10 x prawns
1 dessert spoon of red curry paste
1 cup of white wine

Process: Clean the Sea bass fillets and make three cuts (approx 1 cm) on the middle and sides. Reserve.

Break lemongrass sticks in half, take the sea bass fillet and put them inside the fillets. Place in the fridge for 24 hours to marinate.

For the salad: Peel the oranges and grapefruits and break into segments then cut the white fennel into fine pieces.

For the sauce: Mix the prawns with one cup of white wine , one cup of water and the red curry paste.

Next, warm a pan with olive oil, cook the sea bass fillets with a pinch of salt and white pepper.
Mix the white fennel, oranges and grapefruits with a pinch of salt and another of sugar and place in the middle of the plate. Put the sea bass fillets on the top and drizzle the sauce around it.

Your Host and Chef, Sergio Rifugio, is Italian born but has spent 8 years in Southern Spain, in the Marbella area working in a variety of top class establishments including the running of the Food & Beverage department for the 4 different luxury complexes of the Macdonald Hotels & Resort in the South of Spain. He then created and managed Cooking Holiday Spain, the first company specialising in private & personalised Gastronomic and winery activities in Costa del Sol.

He joined the Yacht Club Cala d'Or as General Manager in early 2009 and has recently launched his latest venture, the all new Cooking Holidays.

With Sergio’s passion for all types of cooking and the Mediterranean, it is sure to rub off on you and you will find yourself delighting in creating spectacular dishes and sharing the Mallorcan culture alongside friends.
